Tangy kale and prawns

This may just be one of my new favourite creations. The flavour combinations just work together!

I basically fried some garlic and chilli, before adding some shredded kale. Just before the kale is cooked, add a good squeeze of lime juice. Add the cooked prawns and keep on the heat until warmed through. To serve, add pomegranate arils and, if you like, a drizzle of coconut milk.

This would make a great side dish, or even a main course if you portion it correctly. It can also be easily modified to suit your tastes – more or less chilli -or more coconut milk – to adjust the heat levels, or change the prawns to chicken or another protein.
