Another day, another delicious lunch! Although, this one feels like it should have been eaten on a bright, warm summer’s day – not the grim, grey, rainy one it has been.
I started by frying green chili in coconut oil, before removing the chili into the food processor and blitzing it with lime juice and some kale to make a dressing. I then fried the prawns in the chili/coconut oil with some cracked black pepper. Simply skewer the prawns with cubes of avocado and watermelon, and enjoy with a salad!
