Sun-dried Tomato and Black Olive Quiche

If you hadn’t already guessed from the fact that I have a post on here titled ‘Eggs, Eggs, Eggs’, I am a fan of eggs. In any form. Including baked, as in this easy quiche recipe.

I blended a courgette with an onion and a few cloves of garlic, before cooking them in a pan until soft and caramelised. I then sliced black olives and sun-dried tomatoes, and whisked eggs (I used 5) in a separate bowl. When the courgette mixture had cooled, I added everything together and baked at 350 F for about an hour. I was starving, so then proceeded to gobble most of it up. Luckily some survived for the purposes of obtaining a picture.
