After making the tahini-date salted caramels I posted last week, I cannot get over the tahini-date combination! I had a large packet of pistachio kernels and so decided to make another treat…I really should stop doing that.
I blitzed my pistachio kernels (about 2 tbsp) into small pieces and put them on a plate for later. I then blended macadamia nuts, raisins, dates and tahini (you can use other nuts/seeds and nut butters, in any ratios you want until you get the desired texture – I didn’t blend for very long, so although sticky and slightly crumbly, it was not completely paste-like). I rolled these into balls and dusted them with the pistachio crumbs before freezing.
YUM YUM YUM.
You may need a straight-jacket to stop yourself from eating all of these at once.
