Chickpea Blondies

Everyone knows about my brownie obsession…but I have to admit I don’t think I’ve ever eaten a ‘blondie’. Actually, I think I might have had one when I was about 13 (baked by a friend’s mum, who was an amazing baker!). But none since then.

Chickpeas are usually reserved for hummus. Because, HUMMUS. However, I have found a rival use for them, and it is a dessert! These chocolate-chip chickpea blondies are really really yummy, and I find them so sweet already that you could probably fool people with standard tastebuds!

I used 1 can of chickpeas (about 265g I think it was), 2 tablespoons of almond butter, 1 tablespoon of honey, half a scraped vanilla pod, a dash of salt, 2 eggs, 1/4 teaspoon each of baking powder and baking soda, and some dark chocolate chips. And that was it! I whizzed everything (apart from the chocolate) up in the food processor, then added the chocolate chips and baked for about 25 minutes at 350F. Sooooo yummy. I don’t think I should make these again for a while, because they are good enough for me to want to eat the whole pan at once. Naughty Rachel.

In other brownie-related news, I also made a batch of brownies this week. Eggplant brownies. Yes, you heard me! I’ll post the recipe for that in a couple of weeks – my pictures weren’t that great because the pan was too big and so they looked quite..er…flat. But when I get some nicer pictures, I’ll put it up. Here’s a photo of my flat eggplant brownies with the blondies:
