Salmon with veggies is pretty much my favourite dinner – I love just done (slightly rare, still moist) fish with a lovely crunchy skin, and piles of green leaves, along with some other veggies – beetroot, sweet potato, mushrooms or, as here, red cabbage.
I braised the sliced red cabbage with some balsamic vinegar, and roasted some chopped fennel until crispy. We ate this with some lightly baked thick courgette noodles and kale. Yum!
