Sundried tomato and basil stuffed chicken breast

Pretty straightforward: I blended sundried tomatoes with basil and sunflower seeds, and stuffed butterflied chicken breasts with the mixture. I baked at 200C for around 40 mins (20 minutes covered, 20 minutes uncovered).

I served these with balsamic-roasted shallots and steamed kale.
