This is a really yummy way to use up chicken – I had some leftover from a roast, and so just pan-fried it with lemon juice, fresh basil, dried oregano and chicken stock.
I made some wraps using egg, arrowroot and coconut flour. Along with the chicken, I filled them with lettuce, cherry tomatoes, black olives, caramelised sweet potato, shredded cucumber, and avocado. I also made a tzatziki-style sauce using natural soya yoghurt, paprika, cucumber and olive oil.
I got a bit over-excited and tried to get nice grill-marks on my wraps, but instead they just ended up a bit toasted and crispy. Maybe more like tacos than gyros…but that’s my own fault! And they were still delicious…and put me in the mood for tacos! Watch this space…
