This probably isn’t the most attractive-looking dish I’ve ever made (something to work on, I suppose?). However, it was really comforting and tasty.
I made a creamy cauliflower sauce by blending steamed cauliflower with coconut cream and a little garlic.
I pan-seared the pancetta and a few strips of bacon along with baby scallops. I then covered these in the sauce and simmered for a few minutes, before serving with kale, paprika and black garlic.
