Asparagus rice sushi

Did you know that cauliflower rice has now become so ‘trendy’ you can buy it ‘pre-riced’ at certain food shops now? Likewise with courgetti. I find this shocking. How can you be so lazy? It literally takes less than 1 minute, and your food is much fresher!

Anyway, rant over.

My lovely housemate brought back a massive (and I really do mean MASSIVE) bunch of fresh asparagus from her family’s garden back home last time she visited. It was so, so yummy. You really just can’t beat the flavour of home-grown vegetables.

I love asparagus done simply – either steamed or griddled. But seeing as I had so much to use up, I started thinking about what else I could do with it. The idea of using it as rice quickly popped into my head. I checked Google to see if this was a ‘thing’. Apparently not, as pretty much all the recipes that come up when you search ‘asparagus rice’ involve some variation of rice cooked with asparagus.

This should definitely be a thing. I just blitzed it in the food processor, before pan-frying it quickly so it cooked through.

After leaving it to cool, I rolled it and some smoked salmon and cucumber inside nori to make yummy sushi! Excuse my presentation…I did try but I was just so hungry and excited to try this new creation that I rushed it slightly! You also have to be quite careful with the texture of the asparagus, as it is quite moist and less sticky than rice (obviously) so will soak through the nori quickly if you’re not careful. I found it stuck everything together better than cauliflower rice though.
