Warm chicken and watercress salad with asparagus, courgette and hazelnut

There isn’t much you can do to preface a salad ‘recipe’…

I basically roasted courgette ribbons, sliced asparagus, beetroot, celery and hazelnuts. I added them to a nice salad base of watercress, spinach and rocket, topped with a good helping of leftover roast chicken. I drizzled it with a bit of extra virgin olive oil and some chunks of orange.
