My favourite childhood ice-cream was, without a doubt, mint-chocolate chip! So I decided to recreate this as a yummy recovery snack.
I blended frozen spinach, banana, loaaads of fresh mint (you could add some peppermint oil if you like), coconut milk and a bit of vanilla, before stirring in some raw cacao nibs for a lovely chocolate hit.
It might not look that appetizing…but that is not surprising given my general lack of photographic skills. Definitely worth a try if you enjoy this flavour of ice-cream 🙂
