I had one of my lovely cousins over to stay this weekend. After parkrun I made us a brunch of halloumi and fig salad with pomegranate and toasted hazelnuts, on a bed of rocket, spinach and watercress. We had it alongside toast/gluten-free oatcakes and some homemade tomato chutney.
It can be quite a struggle to find halloumi without cow’s milk in the UK – but I managed to source some in M&S! They actually have quite a large range of sheep and goat milk cheeses, I was impressed. The halloumi said it was ‘with mint’ but luckily it didn’t have a strong mint taste. I’m sure the flavour pairing is lovely, but I wanted a standard halloumi to then dress up myself…this one was a lovely texture, and I’d definitely buy it again!
