Peanut butter coconut bites

I ran the Nike Women’s 10k London a few weeks ago, and the Vita Coco stand were handing out really yummy energy bites!

I made my own version (a little bit less sweet, as I added fewer dates and raisins, and with more protein).


I used:

-50ml coconut oil

-50g gluten free oats

-100g peanut butter

-30g cashew butter

-1 tbsp cinnamon

-50g pea/rice protein

-50g dates

-50g raisins

-dessicated coconut (to roll)
