This is a really easy dish I like to make in the slow cooker – kind of like a lamb tagine, except not cooked in a tagine (if only I had one!).
I used lamb leg, apricots, prunes, passata, parsley, chickpeas, carrots, celery, onions and garlic – all cooked together for about 5 hours on a high setting (usually I’d cook it on low for 8-10 hours, but I was short on time!).
I served this with my quinoa, mint and pomegranate salad.
