Caramel ice cream

Surely I can’t be the only (slightly strange) person who enjoys cold desserts etc. during winter? I prefer warm ones…but there’s just something about ice cream, or a piece of banana bread straight from the freezer that I really can’t resist.

This ice cream was made using thick coconut milk, a few dates, cashew butter, cinnamon, pea and egg proteins, vanilla powder, almond milk and some nakd toffee treat and salted caramel nibbles. Blended all up, then frozen for about 45 minutes to set (any more, and you’ll need to defrost them slightly).
