Mmmm…mackerel….a close contender for my favourite fish.
For something a little bit different, I coated mackerel fillets in curry powder and left to marinate for a few hours. I then pan-fried them, and served with toasted cauliflower and rose rice, cavolo nero and an aubergine, tahini and black garlic puree.
I had fresh mackerel once on holiday and it was just soooooo good. When I got home home, I bought some frozen mackerel and served it to guests, wanting to share my discovery. It was so vile, I had to toss it and find something else for people to eat! Mackerel can be a tricky fish I guess. Yours looks on the fine side!

Yes, even if you buy it fresh from the market it doesn’t taste as awesome even the next day! The fresher the better 🙂
