This was another slow-cooker recipe – prawns, cod loin and chickpeas cooked with a curry sauce I made using onions, garlic, medium curry powder, tomato puree and a little coconut milk.
I blitzed the cauliflower up with fresh coriander to make a gorgeously green coriander rice side.
Look at that lovely curry sauce (reduced after everything had finished cooking…mmmm…can’t wait to use it later in the week. On eggs? Salmon? Turkey? Who knows!!).
