I very rarely have a vegetarian meal, but this was yummy enough itself that I didn’t end up adding any meat to it (although it would be nice with some chicken too).
I sauteed onions and garlic, before adding mushrooms (some whole, some sliced) and whole cooked chestnuts. The sauce was a blend of coconut milk and black pepper.
I added spiralised courgette right at the end, and stirred in some spinach too.
