Pretty simple recipe for today – spicy lettuce cups! I used half and half of beef and pork mince, but you could use chicken, turkey etc – any combination or individually. This would also work well with prawns.
I sauteed ginger, chili, garlic and red onion in coconut oil before adding the pork and beef to brown. I also added some basil, coriander and cracked black pepper. Feel free to add soy sauce if you eat it – I used a touch of coconut aminos.
I blitzed cauliflower in my Vitamix with lots of coriander and basil to make green rice, and served it all up in lettuce leaves with a squeeze of lime juice.
Easy, quick and very delicious!
