I needed a delicious post-run recovery meal for lunch today, and this certainly fit the bill 🙂
I seared yellowfin tuna steaks in coconut oil with some cracked black pepper, leaving to finish cooking in the residual heat of the pan after flipping (so they were juicy and medium rare).
For the salad, I used black beans, coriander, mixed peppery leaves, cherry tomatoes and a big squeeze of lime juice, along with half an avocado.
