I’ve been meaning to try pulled jackfruit for a while – I think I saw it on Pinterest a year or so ago and I’ve had a tin of jackfruit in my cupboard all this time! I made the wrap using 1 egg and some egg white powder, 1 tbsp ground flaxseed and some almond milk.
I drained and then pulled apart the jackfruit before cooking it in coconut oil with smoked paprika, cayenne pepper, garlic, coriander and lime juice.
All served with a big dollop of fresh guacamole, cherry tomatoes and black beans, cauliflower rice, veggie slaw and crunchy lettuce.
