Pear, lentil, roast celeriac and fennel salad

I roasted 2 diced celeriac and a large bulb of fennel in a little coconut oil, and mixed with about 250g Beluga lentils and a chopped pear.

This salad works really well with oily fish like mackerel or chicken 🙂 And some lovely crunchy leaves – no meal can go without that!
