I love matcha! I’m quite fussy about my matcha lattes (I haven’t yet found a place in London that makes nice ones! – any recommendations?), and also love adding matcha powder to things like pancakes, waffles and protein balls. Matcha banana bread has been on my list of experiments to make for at least a month now, but once I saw pictures of Anna’s delicious pistachio and date banana bread (http://proteinpow.com/2016/06/bananaproteinbread.html), I just couldn’t wait any longer!
For my loaf, I used:
~130g Protein Pow pea mix
~2 large eggs
~1/4 cup almond milk
~1 tsp each baking soda and baking powder
~1-2 tbsp matcha powder (add more or less, to taste)
~50g date syrup
Mix it all up, pour into a tin and bake at around 180 degrees C for around 25 minutes (or until a toothpick comes out clean). Leave to cool slightly before cooking, and enjoy!!
