So….my nutter friend and I conducted the first tinned peach review a few weeks ago (don’t ask – some things are better seen!), and had lots and lots of yummy peaches left over.
Rather than using apple as my sweet/sticky base for making granola, I blended up these peaches instead, with about 2 tbsp coconut oil. I squished in gluten-free oats, and then added my mix-ins before baking at around 150 degrees C for 1.5-2hrs, stirring every half hour or so and breaking up the chunks slightly smaller each time.
I mixed in lots of cinnamon, pumpkin seeds, sunflower seeds, cashews, raisins, cranberries and goji berries.
And, as you can see, had quite a lot of fun topping with pretty chopped fruit!
