Samphire and asparagus frittata

Another really simple winner of a frittata recipe 🙂

~160g asparagus

~80g samphire

~10 eggs

Lightly cook the asparagus in some coconut oil before adding the samphire and pouring over the whisked eggs.

Cook until…cooked! You’ll need to do this on a low heat so the eggs cook through evenly. The added benefit of this is you’ll get a lovely crispy/slightly chewy ‘crust’ around the edges! 😀
