Some cute little rose and pistachio truffles today, made using ProteinPow’s pea mix!
-equal parts pea mix and nut butter (I’ve used coconut butter, cashew butter and tahini in the past, with tahini being the stand-out winner!)
-honey to taste (I used about 2 tsp for 8 truffles, but you can make it sweeter if you’d like)
-ground pistachios (I probably used around 1/3 cup for 8 truffles)
-pinch of vanilla
-a little almond milk to loosen
Roll into balls, and then sprinkle with dried rose petals! If you’re struggling to get the petals to stick, dab a little honey onto the truffle and then sprinkle or roll in the petals.
