Blackberry and apple pancakes

A really simple and yummy pancakes recipe for pancake day!

This made a big batch of around 16 medium sized pancakes (thick, fluffy, American-style ones), but you can scale it up or down as required.

-60g Protein Pow pea mix (about 5 tbsp)

-1/2 carton two chicks egg white

-1/4 to 1/2 cup almond milk as needed (you may need more or less depending on how thick your batter is, e.g. if you add oats or flax, which will absorb moisture)

-1tsp baking soda

I also added in 1/2 apple (diced into small chunks), 2 tbsp gluten free oats (for lovely texture) and 1 tbsp Linwoods apple, cinnamon and chia flaxseed mix, which gave a lovely texture and flavour, adding some sweetness and spice.

Mix everything together, and spoon into a medium heat pan sprayed with some oil.  I did these in batches of around 3 at a time (with one tester first!).  Flip when firm around the edges.

We topped these with Alpro soya yoghurt (plain, but vanilla would be lovely too), fresh blackberries, sliced apples, blanched almonds, pomegranate seeds and a bit more flaxseed mix!

Full of protein, fibre and vitamins from the fruit.

All on a work morning too – these really don’t take long.  Let me know if you give these a try for pancake day!
