I had a lot of amazing food this weekend, both home-cooked and out…but my absolute favourite, stand-out meal was Saturday night’s: gorgeous rare fillet steak slices smothered in this salty, zingy chimichurri sauce, with roasted sweet potato wedges and lots of greens!
I didn’t manage to get any pictures of the sauce by itself as I ate it so quickly! I dipped salad in it as I cooked my steak, slathered it on said steak dipped chips in it, stole a bit of the boy’s turkey and dipped that in it…and then it was gone! I shared a bit…I swear!
It would also be fabulous with chicken or lamb, or any fish! I’m going to make some more and have it with salmon later in the weeks. And make it next time it’s fajita night!!
Anyway, the recipe for this is so easy! I’ll admit it wasn’t all from scratch (although it would be easy to) as I didn’t have all the ingredients available. I basically mixed two Knorr mixed herb pots with 1 tbsp each olive oil, balsamic vinegar and apple cider vinegar, 1 tsp Lazy Smoked Garlic and 1/2 tsp Lazy Chilies. I then finely chopped 20g coriander and mixed in. That’s it!
I’ve since also made a version at home that was different but also yummy – 20g coriander, 15g parsley, 1 tbsp each olive oil, balsamic and cider vinegar, 1tsp Lazy Garlic (not smoked this time) and some chili flakes.
